Meal in a Cup Smoothie

  • 2 handfuls of spinach
  • 1 large carrot
  • 1 cup almond milk (unsweetened) or other non-dairy milk
  • 1 cup frozen berries
  • 1 Tbsp  Chia Seeds
  • 1/4 cup rolled oats


  • Place spinach, carrot and almond milk in a blender and blend on high until smooth.
  • Add remaining ingredients and blend until desired consistency is reached.


Blending the veggies and almond milk first gives this a nice and smooth consistency. Any leafy green can be used in place for the spinach.
