- 6-8 mangos pitted & diced
- 1 pt cherry tomatoes quartered
- 1 red pepper diced
- 1 red onion diced
- 1 can of corn (sodium free) or 1c frozen corn
- 1 can of black beans sodium free
- 3 limes juiced
- Large handful of cilantro chopped
- Salt & Pepper to taste
- Combine all ingredients in a large bowl.
- Add an avocado (pitted & diced) just before serving for extra deliciousness!
I have found that this taste even better if you make it a few hours before serving so all the flavors have time to marinate together.
