Summer Mango Salsa

  • 6-8 mangos pitted & diced
  • 1 pt cherry tomatoes quartered
  • 1 red pepper diced
  • 1 red onion diced
  • 1 can of corn (sodium free) or 1c frozen corn
  • 1 can of black beans sodium free
  • 3 limes juiced
  • Large handful of cilantro chopped
  • Salt & Pepper to taste


  • Combine all ingredients in a large bowl.
  • Add an avocado (pitted & diced) just before serving for extra deliciousness!


I have found that this taste even better if you make it a few hours before serving so all the flavors have time to marinate together.
