This recipe was a game changer for me for a few reasons. It’s delicious, easy, I almost always have all of the ingredients on hand, it’s pizza… nuff said, but the biggest factor – it takes only a couple minutes to put together and only 10 in the oven… sold!
You can use store bought hummus or homemade hummus, although when choosing store-bought hummus look for oil-free versions. You can do this by scanning the ingredients list. When you find a brand that doesn’t contain oil do a happy dance because they’re very few and far between! Some that we know of are Oasis Mediterranean Cuisine Hummus, Wildwood Natural Foods Lo-fat Hummus, and Trader Joe’s Eggplant Hummus (my favorite!).
With these being “personal pan” sized, each person can create their own. The more you pile on the veggies, the healthier it gets!
Hummus Pita Pizza
Ingredients
- 1 Whole grain pita bread
- 3-4 Tbsp hummus homemade or store bought
- 1 cup chopped veggies onions, mushrooms, peppers, spinach, tomatoes, olives, banana peppers
- 1 Tbsp Nutritional Yeast
Instructions
- Preheat oven to 400 degrees F.
- Spread hummus on pita and top with veggies.
- Place on baking sheet and bake for 10 minutes.
- Remove from oven and sprinkle with nutritional yeast.
