3-Step Spiced Granola

Rolled Oats: As Dr. McDougall outlines in The Healthiest Diet on the Planet, humans have thrived on whole grains for thousands of years. These provide us with energy, are satisfying and are void of disease promoting fat and cholesterol.

Pepitas: These are pumpkin seeds with the shell removed and they pack a punch when it comes to nutrition. Think about it this way.. to grow the entire plant and all of the pumpkins, this seed just needs water, air, sunlight and soil. That means there is a ton of protective nutrients in that little seed. Study after study shows that people who eat seeds live longer and have a lower risk of chronic disease.

Flaxseeds: A daily serving of flaxseeds is included in Dr. Greger’s Daily Dozen due to it’s powerful effects on improving blood pressure and cholesterol as well as decreasing risk of prostate and breast cancer. You won’t even notice it’s in the recipe (or most recipes) but your body will reap the benefits!

We recommend making a big batch of this granola and storing it in a sealed container in the freezer for up to 3 months. We typically use it as a topping rather than a main dish so one batch can last for quite some time.

Ingredients

  • 12 Deglet Noor Dates
  • 1/2 cup Warm Water
  • 2 cup Rolled Oats
  • 1/4 cup Pepitas
  • 1/4 cup Unsweetened Coconut shredded
  • 2 Tbsp Flaxseed ground
  • 1/2 tsp Vanilla
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/4 tsp Salt

Instructions

  • Preheat oven to 300ºF.
  • Combine dates and water in a food processor and process until smooth. Transfer date paste to a bowl and add. all other ingredients. Stir to combine.
  • Spread mixture evenly out on pan lined with parchment paper. Bake in oven for 40 minutes, stirring halfway through. After removing granola from the oven, let it cool completely in the pan.

Notes

Store granola in an airtight container at room temperature for up to 1 month or in the freezer for up to 6 months.
