Mocha Nice Cream

Nice Cream allows for endless creativity when it comes to flavors. This Mocha Nice Cream proves that you can get pretty crazy, even with just a few ingredients!

Espresso powder is concentrated coffee, which is different than instant coffee. It gives this treat a delicious rich flavor. You can find espresso powder in the baking section at most grocery stores. If you’re not a fan of coffee, simply use half as much espresso powder. You’ll enhance the flavor without getting that distinct coffee flavor.

If you don’t have espresso powder, you’re welcome to use instant coffee. Be warned – the final product may be a little more bitter.

Cacao, one of our favorite ingredients, is made with unroasted cacao beans. This is different than cocoa, which is made with roasted beans. Nutritionally, cacao has a lot more to offer. Unroasted beans equals more nutrients and antioxidants. Also, cacao has an amazing rich, chocolaty flavor that you simply cannot get from cocoa.

Cacao powder is in the baking isle of some grocery stores. It’s in the bulk foods section of the health food store nearby, but can be a bit pricey. I’ve come across much cheaper options at the HomeGoods store and on-line (Organic Cacao Powder, Organic Cacao Nibs).

For a sweet and refreshing plant-based treat, simply combine espresso powder, cacao and frozen bananas. Blend and enjoy!

Equipment

Ingredients

  • 3 bananas, frozen
  • 1 T espresso powder
  • 1 T cacao powder
  • 1/3-1/2 cup almond milk, unsweetened or other non-dairy milk
  • 2 T cacao nibs optional

Instructions

  • Add frozen bananas, espresso powder, cacao power and 1/3 cup almond milk to food processor. Process until smooth, adding almond milk 1 T at a time, if needed.
  • Divide into 2 bowl, topping each with 1 T cacao nibs.

Notes

Consistency will be similar to soft-serve. If you'd like a more firm texture, freeze for 30-60 minutes before serving. 
If freezing the nice cream for longer than 2 hours, we recommend adding a splash of rum or an alcohol-based extract to prevent it from freezing too solid. 
Any other non-dairy milk can be used in place of almond milk (i.e. coconut milk, soy milk, hemp milk, etc.)
