3-Minute Poppy Seed Dressing

Vegan Poppy Seed Dressing

 

Lather this delish poppy seed dressing on a huge salad. No need to worry about the refined sugar and oil (learn more about oil here) found in most bottled (and even homemade) dressings. Personally, I enjoy this over a pile of chopped spinach and kale, broccoli, shredded carrots, sliced radish, berries and walnuts. YUM!

You can also enjoy it over steamed or roasted veggies and cooked whole grains. I’ve even used it as a dip for raw veggies like cucumbers and carrots.

Equipment

  • Food Processor

Ingredients

  • 1/2 cup non-dairy milk (almond, oat, soy) unsweetened, unflavored
  • 1 Tbsp apple cider vinegar
  • 1/2 lemon, juiced or 1 T lemon juice
  • 2 pitted medjool dates or 4 pitted deglet noor dates
  • 1 garlic clove or 1 tsp minced garlic
  • 1 tsp onion powder
  • 1/2 tsp salt or to taste
  • 2 Tbsp poppy seeds

Instructions

  • Place all ingredients, except poppy seeds, in food processor or blender. Blend until smooth. 
  • Stir in poppy seeds. 
  • Serve over fresh salad or roasted veggies. 

Notes

Keeps in refrigerator for up to 2 weeks in a sealed container.
4 Deglet Noor dates can be used in place of the Medjool dates.
