The Latest Happenings: June Edition

Welcome to June! It’s warming up around here, which means it’s time for Nice Cream. ??? It’s also a time for an update. Here’s what going on with us. We’d love to hear what’s going on with you!

 

What’s in season

Around here, there’s a reason to celebrate! Strawberries are in abundance and they’re on-sale. ??? Wohoo! ?? While continuing to grocery shop online, we’re taking advantage of strawberry season as much as possible. We enjoy them on their own, dipped in our Decadent Chocolate Dip or in one of our many strawberry-filled recipes: PB&J Tart, Delectable Dark Chocolate Covered Fruit, Rainbow Fruit & Greens Salad, Chocolate-Covered Strawberry Chia Pudding

While everything in our garden is growing like crazy, there’s just a couple of things we’re regularly enjoying. The first – and one of my FAVES – asparagus! This super healthy and flavorful veggie is great roasted, steamed or even raw. Also – leafy greens! There’s nothing better than fresh-out-of-the-garden greens to use as a base to your favorite salad. Finally – radish! This easy-to-grow veggie goes especially well with our Roasted Red Pepper Hummus.

Painted Garden Rocks

We recently enjoyed a fun outdoor activity – painting garden rocks! Lex really has a gift of painting bell peppers (she did BOTH of the pepper shown below! ?). ? These colorful rocks liven up the garden and make it easy for me to ask my husband to pick some chard.. without risking that he bring back beet greens! If you have a herb garden, these rocks could really be handy. My mint leaves and oregano look a lot alike and topping a pizza with mint would just be weird.

Podcast

On my many many walks, I’m entertained by a variety of podcasts. One I’ve recently really enjoyed: The Exam Room. This is offered by the Physician’s Committee for Responsible Medicine and features a variety of medical professionals. It’s hosted by weight loss champion Chuck Carroll who makes it light and fun. The information is credible yet very digestible, even for those without a medical background. While it primarily focuses on nutrition, there is also a good mix of relevant health topics. Including, of course, COVID-19.

Essential Oils

While many have been taking advantage of essential oils for many, many years, it’s something I’ve only been dabbling with for a couple of years. However – as time goes on I find more and more great ways to put them to use! Of late, I’ve especially enjoyed a drop of lavender on my pillow before bed. Or, when I’m really needing some relaxation, a drop on a wet, cool washcloth draped over my eyes or forehead. Sooo relaxing. Other uses – All-purpose cleaner: white vinegar and water (1:1 ratio) with lemon oil. Sugar scrub: Sugar and coconut oil (2:1 ratio) and eucalyptus oil. Body Butter: coconut oil, cacao butter (1:1 ratio) with tea tree oil. Laundry: a few drops of orange or lavender to freshen up clothes, towels or blankets.

I’m certainly no expert on this topic and recommend reading up on essential oils before diving in. However, I can say that I fully enjoy incorporating them and would love to hear if and how you put then to use!
