While oatmeal is usually paired with fruit for a sweet flavor, we just had to try adding veggies and savory spices. Though we were skeptical, what a pleasant surprise this was!
This oatmeal can get your day off to a great start with a big serving of veggies – tons of vitamins, minerals and filling fiber. Feel free to use your favorites. We recommend a mix of colors for a mix of nutrients.
Whether you choose to use steel cut or rolled oats you’ll be getting a serving of whole grains. Whole grains are great because they keep you feeling full, control your blood sugar levels and provide long-term energy.

Plant-Based Savory Oatmeal
Ingredients
- 1 cup steel cut or rolled oats
- 1 cup vegetable broth
- 1 cup water
- 1/2 tsp turmeric
- 1 tsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 2 T nutritional yeast
- 1 cup chopped veggies (carrots, celery, bell peppers, mushrooms)
- salt, to taste
Optional toppings
- salsa
- hot sauce
- avocados
- pepitas
- sprouts
- cilantro
- cherry tomatoes
- ground flaxseed
Instructions
- Add oats, broth and water to a medium saucepan over medium heat. Bring to a simmer and reduce heat to low. Let simmer for 15 minutes for steel cut oats and 3 minutes for rolled oats, stirring occasionally.
- Stir in all remaining ingredients, except toppings, and continue simmering for 5 minutes, or until veggies are soft.
- Serve warm with toppings of choice.
