Savory Oatmeal

 

While oatmeal is usually paired with fruit for a sweet flavor, we just had to try adding veggies and savory spices. Though we were skeptical, what a pleasant surprise this was!

This oatmeal can get your day off to a great start with a big serving of veggies – tons of vitamins, minerals and filling fiber. Feel free to use your favorites. We recommend a mix of colors for a mix of nutrients.

Whether you choose to use steel cut or rolled oats you’ll be getting a serving of whole grains. Whole grains are great because they keep you feeling full, control your blood sugar levels and provide long-term energy.

This recipe has nutritional yeast and the prized spice turmeric. You can also add ground flaxseed for an extra nutrient punch. Visit our essential ingredients page for help with locating these ingredients.

Plant-Based Savory Oatmeal

Ingredients
  

  • 1 cup steel cut or rolled oats
  • 1 cup vegetable broth
  • 1 cup water
  • 1/2 tsp turmeric
  • 1 tsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 2 T nutritional yeast
  • 1 cup chopped veggies (carrots, celery, bell peppers, mushrooms)
  • salt, to taste
Optional toppings
  • salsa
  • hot sauce
  • avocados
  • pepitas
  • sprouts
  • cilantro
  • cherry tomatoes
  • ground flaxseed

Method
 

  1. Add oats, broth and water to a medium saucepan over medium heat. Bring to a simmer and reduce heat to low. Let simmer for 15 minutes for steel cut oats and 3 minutes for rolled oats, stirring occasionally. 
  2. Stir in all remaining ingredients, except toppings, and continue simmering for 5 minutes, or until veggies are soft. 
  3. Serve warm with toppings of choice.
