The Latest Happenings: August Edition

Welcome August!

Just like the kiddos are headed back to school (for now!), we’re back at it as well. As we shared last month, I have a new little bundle of joy that’s been taking up my time and energy and Lexie has a new home-sweet-home!

After a slow-down on recipe development and posts, we’re excited to get back to a regular routine of new plant-filled recipes and posts. Look out plant-powered world!

With that being said, here’s some current going-on’s..

 

Baby

We’ve survived 5 weeks of parenthood – woohoo! It’s included sleepless nights, what feels like a million diaper changes and oh-so-many hours of snuggling with our little cutie. A resource that’s been a lifesaver with nursing – The Womanly Art of Breastfeeding. Also, the audible version of Brain Rules for Baby has kept me company between visits from the grandmas. ? Any other reads that you mamas out there recommend?

 

Freezer Meals

Before baby arrived we stocked the freezer with plant-powered meals and boy has that been helpful. Thawing a soup at dinner-time means a healthy and filling meal with minimal energy. Big WIN! ? What did we fill the freezer with? Daily Dozen Smoothies, Mexican Lasagna, Dill-licious Split Pea Soup, 1-Pot, 2-Step, 3-Bean Soup, 1-Pot Lentil Curry, Perfect Crispy Baked Tofu, Everything Breakfast Balls and Howie Bars. These last two are perfect eat-with-one-hand snacks while nursing.

I even froze a big batch of cooked steel cut oats. After cooking I poured it into muffin tins, froze overnight and then transferred to freezer bags. Easy-peasy. Pop a couple of “oatmeal muffins” into the microwave for 2 minutes and you’ve got breakfast! ??

 

Exercise

Obviously getting back to exercise is a slow process, but I’ve recently incorporated yoga back into my daily routine. Stretching and building strength.. just what the doctor ordered! Have you ever tried Yoga with Adriene on YouTube? Awesome – and FREE – yoga classes! ?‍♀️?

 

Eating In

With the coronavirus still among us, you may still be eating a lot of meals at home. To enjoy plant-based and tasty meals, this doesn’t have to equate to a lot of work. Here’s some meal delivery services we’ve been taking advantage of during our time at home: Home Chef, Splendid Spoon, and Veestro. We’ve also reviewed Purple Carrot and Hello Fresh; if you’re considering trying out those, give those reviews a read first.
