Chef AJ has followed a plant-based diet for longer than either of us have been alive, so it’s not surprising that she has some of the most phenomenal recipes. She starts the book with her inspiring personal story of how she arrived at eating a whole food plant-based diet with no added sugar, oil or salt and no processed food. Chef AJ shoots it straight by addressing common comments such as “it’s too expensive” or “I don’t have time.”

Under her “it’s too expensive” section, Chef AJ points out that some of the cheapest food out there are potatoes, beans and rice. These are all unprocessed and nutritious. She also recommends buying frozen veggies and fruit.

In regards to both the cost and time comments, Chef AJ isn’t shy about pointing out that, at the end of the day, it’s about your priorities. If your health is a priority, you’ll invest the money and the time. Like I said, she doesn’t beat around the bush!

While the first third of the book gives an overview of the why and how, she quickly gets to the good stuff – the recipes. Starting with desserts (20 recipes in this section), she makes grocery shopping easy by using many of the same ingredients throughout. The AppeTEASERS and Beverages sections each have 11 recipes, there are 14 Enticing Entrees , 12 Salads & Dressings, 10 soups, 16 sides and 14 truffles.

Unprocessed is an enjoyable and easy read leaving you excited to try out the recipes in your kitchen.
