The Latest Happenings: January Edition

Nat and I are introducing a new years resolution, which we hope a few of our readers (hi mom) will enjoy. We love hearing from and connecting with our readers and hope to expand opportunities for this. Therefore, our resolution is to share a once-a-month “latest happenings” update. We would love to hear back from you about your latest life happenings as well! One sentence… a short paragraph… a novel… whatever it may be, we’d love to hear from you.

 

With this being the first, I’ll give a quick rundown of my past year.

About a year ago my husband, Jeff, and I decided we wanted to move back to northeastern Indiana (where we’re from) after living in Houston for 4 years. Of course, we can’t make life simple, so in between the move from Houston to Indiana, we lived in Colorado for a hot second.

The timeline of events: Last April Jeff moved from Houston to Aspen, CO to open a summer pop-up bar. I stayed in Houston to finish out the school year (teaching high school) and then joined Jeff in Aspen. When late summer rolled around, I moved to Indiana for the start of the fall semester to teach nutrition and wellness classes at Trine University. In October Jeff closed up shop in Aspen and joined me in Indiana.

One of the best things about being back in Indiana is living close to Nat. This allows us to tag-team blogging tasks that we’ve always had to do from separate parts of the country. Taking those flawless food photographs (ha!) is harder than it seems. Being able to photograph together means better pictures and impeccable hand modeling by Natalie. ???

Jeff and I tried out Hungryroot, a meal kit delivery service, for a couple months this fall. My overall takeaway… for those that don’t enjoy cooking but are trying to make health-conscious food choices, give it a try. They have a vegan option, along with many others, and the meals take 5 to 10 minutes to whip up. So quick. So easy. Won’t break the bank. If you’re interest you can check that out HERE.

Some superrr exciting news for my fellow northeastern Indiana people… Imperfect Produce has finally made its way to us! With the holiday season just coming to an end I must mention some of our holiday food successes.

Our Chocolate Banana Quick Bread was a hit, per usual, at Thanksgivings this year. It’s an oldie but so so good. Our Simple Red Cabbage Coleslaw also made an appearance at Thanksgiving and… drool ?. Christmas festivities included an everything-but-the-kitchen-sink salad with a homemade honey mustard dressing. We received some demands that it be put on the blog so, stay tuned! Included in the Christmas meal lineup was our Kale Salad with Blueberry Balsamic Dressing. Unfortunately someone (me ?) forgot to take it out of the fridge. Whoops. Still delish 1 day post-Christmas. I re-discovered my love for our Chocolate Coconut Snowballs and our Lemon Turmeric Energy Balls (store these in the freezer and enjoy frozen.. so good). What were your holiday culinary successes? To finish it off, let’s talk new years resolutions. A resolution that should be at the top of the list for anyone wanting to improve their health is to EAT MORE PLANTS!
