Dr. Fuhrman doesn’t define fast food as only those meals that are handed through the car window. Fast food includes foods you get fast, eat fast, digest fast and turn into fat fast.
This of course includes those assembly line made foods served at chain restaurants:
– processed meat
– pizza
– burgers
– french fries
– pretzels
– soft drinks
– rich desserts
It’s also commercially made foods with artificial ingredients:
– processed grains
– sweeteners
– salt
– oil
All of these have had health-promoting nutrients removed and/or are full of toxic chemicals that are both damaging to our health and addictive. As Dr. Fuhrman states “Fast food is suicide on the installment plan.” The more we eat of it the higher the risk of those leading killers: heart disease, cancer, diabetes, Alzheimer’s disease, liver disease, dementia, kidney disease and obesity, to name a few.
Dr. Fuhrman points out the dramatic increase in the amount of sugar, soda, oils, cheese and meat that Americans are eating. The chart on the right shows just how significant those increases have been. These changes have led to a big jump in overall calories. In 1900 the average person ate 2,100 per day and in the year 2000 it was up to 2,757. With these changes in mind it’s not hard to believe that obesity, heart disease and cancer rates have soared.
Fast Food Genocide offers an intriguing history lesson that led us to the eating habits that are common today. It then outlines the diet that will save us from this genocide: lots of whole, plant-based foods such as veggies, fruits, whole grains, beans, nuts and seeds.
