Ingredients
1can100% pure pumpkin
1canwhite beans, drained and rinsed
1.5cupsrolled oats
1cupdiced onion
1Tpaprika
1Tcumin
1tspcinnamon
1tspred pepper flakes (optional)
1/2tsp ground black pepper
1/4tspsalt
Instructions
Preheat oven to 375 degrees F.
Place all ingredients in the mixing bowl of a stand mixer fitted with a flat beater. Mix until fully combined and only a few beans remain.
Form mixture into 8-9 patties. Place on a cookie sheet lined with parchment paper.
Bake for 30 minutes, or until patties are firm.
Serve warm on a whole grain bun or bed of leafy greens with toppings of choice: avocado, hot sauce, mustard, greens, tomato, etc.
Notes
If you don't have a stand mixture and flat beater, simply add all ingredients to a large mixing bowl and mash together with a potato masher until only a few in-tact beans remain.
