Breadmaker Soft Pretzels with Sweet & Spicy Dijon Dip

1 1/2Tbspagave or maple syrup
3cupwhole wheat flour
1 1/2tspfast rise yeast
4cupswater
1/4cupbaking soda
salt to taste
Sweet & Spicy Dijon Dip
1/4cupdijon mustard
8pitted datesor 2 Tbsp maple syrup
1 1/2Tbspsriracha
5Tbspsoy milkunflavored, unsweetened
Instructions
Pretzels
Add the 1 cup + 2 tbsp water, agave, flour, and yeast to the bread machine in the order listed. Turn on the dough cycle. Make sure to check the dough after 5 or 10 minutes to scrape down sides and add a tablespoon of water or flour if needed.
When the dough cycle is finished (mine takes 1.5 hours), remove the dough from the bread machine and place on a clean surface. Divide into 8 equal pieces. Roll each piece into a ~20 inch rope and form into a pretzel shape.
Preheat the oven to 425 degrees F.
In a medium saucepan, bring the 4 cups of water and baking soda to a boil. Drop 1 pretzel at a time into the boiling water; boil for 15 seconds. Remove it with a slotted spoon, place it on an oiled baked sheet and sprinkle with salt. NOTE: I don't recommend using parchment paper as they will stick!
Bake pretzels for 8-10 minutes, or until golden brown. Garnish with parsley if you're feelin fancy.
Sweet & Spicy Dijon Dip
Place all ingredients in a food processor. Process until smooth, stopping periodically to scrape down the sides. Add more soy milk to reach a thinner consistency.

If you don't have a bread machine, that's ok! You can use a stand mixer with a hook attachment instead.Stand Mixer Directions: Combine the water, agave, both flours and yeast in the bowl Using the dough hook attachment, mix on low speed until well combined. Change to medium speed and knead until the dough is smooth and pulls away from the side of the bowl, approximately 4 to 5 minutes. (Add more flour as needed) Remove the dough from the bowl, clean the bowl and then oil it well with vegetable oil. Return the dough to the bowl, cover with plastic wrap and sit in a warm place for approximately 50 to 55 minutes or until the dough has doubled in size.If you're not a spicy fan, use just 1 tablespoon of sriracha for the dip. Dijon DipIf you don't want to use a food processor, you can substitute 2 tablespoons of either maple syrup or agave for the dates. This allows you to simply mix the dip ingredients together in a small bowl rather than blending in a food processor.
