baby bok choy, chopped

spinach, chopped

mango, peeled and cubed (or 1 cup of frozen mango cubes)

red onions, diced

sesame seeds
sprouts for garnish (optional)
Dressing

rice vinegar
1
T
chili garlic sauce

T
tamari (or soy sauce)
salt, to taste
ground black pepper, to taste

pitted dates
Instructions
Add chopped bok choy, spinach, mango and onion to a large salad bowl.
Place vinegar, chili garlic sauce, tamari, salt, pepper and dates in a food processor and blend until smooth.
Pour dressing over salad, mix and serve topped with sesame seeds and sprouts.
Store left-overs refrigerated for up to 3 days.
