Preheat oven to 350'F. Line an 8 x 8" pan with parchment paper or coat with a nonstick spray.
In a food processor combine the milk, dates, ground flaxseed, vanilla, cinnamon and maple syrup. Process until smooth and then let sit for 10 minutes to allow mixture to thicken.
Cut or tear bread slices into small bite sized pieces and place them in the loaf pan.
Pour the milk mixture over the bread in the loaf pan and shake it gently so the mixtures seeps into all the crevices. Sprinkle chopped pecans over top and bake for 1 hour and 10 minutes.
Allow to cool completely before removing it from the pan.
