Kale Salad with Blueberry Balsamic Dressing
Some of the healthiest foods on the planet come together to create this beautiful and bold kale salad with blueberry balsamic dressing.

kale, chopped

apple, chopped

cucumber, chopped

goji berries (or raisins)

pecans, chopped

sunflower seeds
Blueberry Balsamic Dressing

cup
balsamic vinegar
1
cup
frozen blueberries, thawed

pitted dates

tsp
salt
1/4
tsp
ground black pepper
Instructions
Combine all salad ingredients in a large salad bowl.
Add all dressing ingredients to food processor. Process for 60 seconds, or until smooth.
Pour dressing over salad and toss.
Salad can be enjoyed immediately but refrigerating for 1-2 hours prior to serving results in best flavor.
Store refrigerated, in a sealed container, for up to 1 week.
