Sriracha Aioli
2/3cupcashewsraw

Instructions
Black Bean Patties
Preheat oven to 375 degrees F.
Saute onion and garlic in a small pan over medium heat with 1 T water for 2-3 minutes, or until onions start to soften. Remove from heat.
Add all black bean patty ingredients (except toppings) to the mixing bowl of a stand mixer fitted with a flat beater. If using a tilt-head mixer, lock head into place. Mix ingredients on low until fully combined (about 1 minute).
Form mixture into 12 balls and flatten into patties on 2 parchment paper lined baking sheets.
Bake for 30 minutes. Remove from oven and let sit for 10-15 minutes; patty will firm up as they cool.
Serve on whole grain bread, in a wrap or over a bed of greens with your favorite toppings.
Sriracha Aioli
Place cashews in a small bowl. Fill bowl with boiling water and let sit for 20 minutes. Strain water out. You can also let cashews soak in water overnight.
Place cashews along with all other ingredients in a food processor and process until smooth. Stop and scrape down sides as needed.
Notes
Store aioli in a sealed container in the refrigerator for up to 4 days. Freezer meal: To freeze cooked and cooled patties leave on baking sheet and place in freezer for at least 1 hour. Transfer patties to air-tight freezer bag for up to 3 months. For a meal in minutes, reheat frozen patty in the microwave for 30-45 seconds and serve. These are perfect for making in bulk and keeping on-hand for a quick and easy meal.
