Quinoa Avocado Garden Salad

quinoa

water

tomatoes
chopped

cucumbers
chopped

red cabbage
shredded

baby spinach
1
avocado
cubed
1/4
cup
fresh parsley
chopped

Tbsp
onion
diced

lemon
juiced
Salt & pepper
to taste
Instructions
Rinse quinoa. In a small saucepan, combine the quinoa and water
Bring to a boil, cover and turn down to a simmer until all water has been absorbed. Approximately 10 minutes.
Let quinoa cool.
Combine all ingredients to a bowl and toss well.
Notes
Salad may be stored in the refrigerator for 3-4 days. Quinoa can be made the day before to save time.
