Summer Mango Salsa
Ingredients
6-8
mangos
pitted & diced
1
pt
cherry tomatoes
quartered
1
red pepper
diced
1
red onion
diced
1
can of corn (sodium free) or 1c frozen corn
1
can of black beans
sodium free
3
limes
juiced
Large handful of cilantro
chopped
Salt & Pepper to taste
Instructions
Combine all ingredients in a large bowl.
Add an avocado (pitted & diced) just before serving for extra deliciousness!
Notes
I have found that this taste even better if you make it a few hours before serving so all the flavors have time to marinate together.
