Mojito Fruit Salad

Day 3 of our 7 day Spring Salad Series is here and we’ve got a duesy for ya!

According to Urban Dictionary (the most credible of sources) duesy is slang for “the finest of its kind” and that’s spot on for this salad.

We’re switching things up with this upgraded fruit salad. Salad doesn’t always equate to leafy greens. And thank goodness for that because how boring would that be? This is an upgraded fruit salad because we’ve thrown in a curve ball…mint. And it really changes the fruit salad game (think mojito).

A big study (2010 Global Burden of Disease Study) determined that the the standard American diet is the leading cause of disease and disability in the US.. not super shocking. What IS surprising is that not eating enough fruit was determined to be the very WORST part of the diet.

This is hard to imagine considering how delicious and sweet fruit is. While I regularly talk to people who don’t enjoy veggies, I can count on one hand (probably with fingers to spare) the number of people who have told me they don’t like fruit.

The fruit problem doesn’t seem to be due to preference since virtually everyone likes fruit. Maybe it’s a convenience issue? By washing and chopping fruit ahead of time you can create the path of least resistance to your 4 servings a day (as recommended by Dr. Greger’s Daily Dozen).

To keep your fruit world exciting, mix things up with this upgraded fruit salad. When choosing the fruit, go for a variety of colors for a variety of nutrients. You can make this at the beginning of the week and the flavor will get better every day.

Recipe hack: Frozen fruit also works in this recipe. Simply thaw (do not drain liquid) and stir in 1/2 cup fresh chopped mint leaves.

A big bowl of fresh fruit is delicious on it's own, but if you're looking for something different, add citrus and mint for an entirely new experience.

Ingredients

  • 4 lbs mixed chopped fruit pineapple, mango, berries, grapes, peaches, pomegranate seeds, kiwi, mandarin oranges
  • 1 orange
  • 1 lime
  • 1 lemon
  • 1/2 cup fresh mint leaves, chopped

Instructions

  • Juice orange, lemon and lime into a small bowl. 
  • Add juice to mixed fruit and stir to combine. 
  • Add chopped mint leaves and stir until evenly distributed. 
  • Can be served right away but we find this is best after refrigerated for at least 1 hour. 

Notes

1/4 cup orange juice can be substituted for juiced orange. 2 tablespoons bottled lemon juice can substituted for lemon. 2 tablespoons lime juice can be substituted for lime.
Mint used was 1, .66 ounce container. 
Store refrigerated for up to 1 week. The flavor gets better every day!
