Cinnamon Roll Bread Pudding

By now you’ve likely contemplated what your resolution for this new year should be. When making those resolutions we have a few tips.

Make sure to keep long-term health in mind rather than short-term appearance. Ditch the fad diets and weight-specific goals. Sometime we get the notion in our head that if we aren’t going going going all the time then we’re slacking. This year make a point to take some me-time each and every day, whether that’s reading a book, watching a show, going for a walk, enjoying a latte, or indulging in this delicious cinnamon roll bread pudding. So grab a generous portion of this cinnamon goodness, kick your feet up and take some time for yourself… and then do it again tomorrow!

 

Cinnamon Roll Bread Pudding

 

This bread pudding does take quite a bit of time to bake, but the actual preparation is so quick and easy.

All you do is combine the bread pudding ingredients in a food processor and tear up the bread into small pieces. Pour the pudding over the bread, sprinkle on some chopped pecans and bake. That’s it! Simple, easy and your house will smell amazing for the entire day.

We used Little Northern Bakehouse’s Cinnamon & Raisin Bread for this recipe and oh my gosh did it turn out good!

Little Northern Bakehouse is a bread company that provides healthier, gluten-free breads. They have a millet & chia loaf, seeds & grain loaf, two new sprouted grain varieties, among a few others. We recommend using sprouted grain breads for your day-to-day bread needs (i.e. avocado toast, fruity nut butter toast, radish & black bean hummus toast, etc.). The sprouting process makes the nutrients in the bread more available when you digest them so you get more nutrition from each slice.

Plant-Based Cinnamon Roll Bread Pudding

Plant-based cinnamon roll bread pudding, made with cinnamon raisin bread & sweetened with dates and maple syrup.

Ingredients

  • 1/2 loaf Little Northern Bakehouse Cinnamon & Raisin Bread
  • 1 cup soymilk unflavored
  • 10 deglet dates pitted
  • 2 Tbsp ground flaxseed
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 3 Tbsp maple syrup
  • 1 small handful pecans roughly chopped

Instructions

  • Preheat oven to 350'F. Line an 8 x 8" pan with parchment paper or coat with a nonstick spray. 
  • In a food processor combine the milk, dates, ground flaxseed, vanilla, cinnamon and maple syrup. Process until smooth and then let sit for 10 minutes to allow mixture to thicken. 
  • Cut or tear bread slices into small bite sized pieces and place them in the loaf pan. 
  • Pour the milk mixture over the bread in the loaf pan and shake it gently so the mixtures seeps into all the crevices. Sprinkle chopped pecans over top and bake for 1 hour and 10 minutes. 
  • Allow to cool completely before removing it from the pan.
