Chocolate Peanut Butter Easter Treats

When I first made these and sent a picture to my sis she responded with “Those look dangerously delish!”. And she’s so right.. but just wait until you taste them! I don’t know what it is about the chocolate/peanut butter combo, but every time I dream up a dessert recipe it ends up with that same combo.. and I’m never mad about it.

These treats have a sweet and smooth peanut butter nougat filling with chopped up peanuts and chewy dates and then covered in chocolate. See picture below.. drool.

When avoiding processed foods, sweets and desserts become a challenge. How do you make something sweet without processed sugar or fake sweeteners? Honey and agave are more natural but nutritionally they aren’t much different than the sugar in your pantry. So I guess that means give up desserts, right? Wrong! When you need to sweeten something, dates are where it’s at.

Dates – a sweet fruit – are super versatile and can be used to sweeten just about anything. They’re rich in fiber, vitamins and minerals – things that are not found in processed sweeteners. The only issue now is that these are an Easter treat.. No way am I waiting a year to make these again after Easter! No problem. You can make these in whatever chocolate molds you like or Mini Muffin Tins also work well. I used this Easter Egg Silicone Mold from Amazon when I made these treats. There are lots of other fun chocolate mold shapes available on Amazon as well!

Chocolate Peanut Butter Easter Treats

These Easter treats have that to die for Chocolate/Peanut Butter combo with zero refined sugar or dairy. They're sweetened with dates and dangerously delish!

Ingredients

  • 1/4 cup Peanut Butter
  • 20 Dates pitted
  • 1/4 cup Almond Milk unsweetened
  • Dark Chocolate dairy free
  • 1/4 cup Dry Roasted Peanuts

Instructions

  • Melt dark chocolate in a double boiler or microwave safe glass bowl. 
  • Chop up the peanuts and half of the dates. 
  • Combine peanut butter, the remaining (unchopped) half of the dates, and almond milk in a food processor and process until smooth. Stop to scrape down the sides as needed. Once smooth, place in the freezer until ready to use (this makes it less sticky when placing it in the molds).
  • Coat the bottom and sides of the molds with melted chocolate using a spoon. You can also use small muffin tins in place of molds. If using small muffin tins, wipe them with oil first so the chocolate treats come out easily.
  • Place the chocolate filled molds/muffin tin in the freezer for a few minutes until chocolate is hardened.
  • Remove the molds and peanut butter puree mixture from the freezer. Fill half of each egg or muffin tin with the peanut butter mixture.
  • Sprinkle the chopped up peanut and dates in the molds/muffin tins until they are all filled to the top. Pour melted chocolate in each mold/muffin tin to fill the remaining space. Place back in the freezer to harden. 
  • Once hard, remove the treats from the molds/tins. Store in the refrigerator or freezer. 

Notes

When melting chocolate for your Easter treats we recommend 100% Cacao Baker’s baking chocolate. This is not sweet at all so we like to use half 100% Cacao Baker's baking chocolate and half dairy-free dark chocolate. 
If you're looking for something sweeter then its best to find a dairy-free brand and the higher percent of cocoa the better. Here are some dairy-free brands, although, depending on the percentage, many will still have sugar.
  • Green & Black’s
  • Trader Joe’s semi-sweet chocolate chips
  • Enjoy Life semi-sweet chocolate
  • 70% and up of Lindt products (70%, 85%, 90% and 99% bars)
