Blueberry Cinnamon Nice Cream

Hot summer days can be difficult to survive without frozen treats. Luckily there’s tons of frozen goodies without sugar and dairy!

While the recipe below is one of our favorites, the options are endless when it comes to Nice Cream. Start with a frozen banana base and toss in your favorite fruit: berries, pineapple, mangoes, cherries, etc. You can also get creative by adding cacao, peanut butter, mint, almonds or even espresso powder. The sky’s the limit!

Dr. Greger recommends a serving of berries each and every day and three servings of other fruits. One serving = 1/2 cup of fresh or frozen berries. The recipe below has 3 cups of berries and serves 6, thus all 6 people who are lucky enough to enjoy your batch of Blueberry Cinnamon Nice Cream can check off their berry serving for the day.

Equipment

  • Food Processor

Ingredients

  • 8 bananas frozen
  • 3 cups blueberries frozen
  • 2 cups almond milk unsweetened, unflavored
  • 1 1/2 tsp cinnamon ground
  • 2 Tbsp vanilla extract

Instructions

  • Add all ingredients to food processor and process until smooth, stopping to scrape down sides as needed.

Notes

The consistency will be like soft-serve ice cream. For a more firm texture, transfer to the freezer for 30-60 minutes.
If freezing the nice cream for longer than 2 hours, we recommend adding a splash of rum or an alcohol-based extract to prevent it from freezing too solid. 
Any other non-dairy milk can be used in place of almond milk (i.e. coconut milk, soy milk, hemp milk, etc.)
