Chia Seeds

Chia seeds have become popular and even trendy in the last few years. Restaurants are serving chia puddings and they’re showing up in baked goods and smoothies. We’re chia seed fans because they’re not only functional, but also nutritious!

Chia seeds (*affiliate link) are great sources of fiber and Omega-3 fatty acid among other things. In short, fiber keeps your bowels healthy and moving. Omega-3 fatty acid counteracts inflammation, which reduces the risk of heart disease along with a slew of other chronic diseases. They also contain protein, iron, calcium, magnesium, and zinc (nutrient dense)!

Since Chia seeds have soluble fiber when mixed with fluid they absorb water and become gelatinous. This helps regulate blood sugar levels by slowing down carbohydrate digestion.

Another bonus – I often recommend 1-2 tablespoons of chia seeds daily for lowering cholesterol. They can latch on to and flush cholesterol out of the system. When using them as an egg replacement, they also help avoid consuming the cholesterol in eggs. Double bonus!

Chia seeds are tasteless so they can be added to almost any recipe without affecting the taste. Due to their gelatinous properties they are perfect to use as an egg replacement. Making a chia egg is just as easy as cracking as egg:

Chia Seed Egg Replacement:
1T Chia seeds + 3T water
Stir well. Allow mixture to set for 3-5 minutes.
Use this mixture in place of 1 egg in a recipe.

Chia seeds can be mixed with various combinations of plant-based milks, fruits, nuts, and spices to make chia seed parfaits.  They offer the perfect texture for making a simple jam. They can also be added to smoothies or baked in breads, cookies, etc.

To start reaping the benefits of chia seeds, you don’t have to make a fancy chia pudding or bake a special muffin. Simply start with sprinkling them on your oatmeal or cereal or adding them to your morning smoothie.
